It looks like a really nice example of a mk2. Unfortunately, the market for mk2s is very small and made even smaller still by the addition of all the stereo components. To sell this on ebay for a premium, your timing would have to be impeccable because it matters most who is in the market at the time. I suspect you'd have better luck to put the car back to as close to original/stock as you can and sell the stereo components one-by-one on e-bay. The car itself, that clean, despite the miles, might bring close to or more than was bid before, then the stereo components would be open to a much wider market - people who want to put them into their honda, scion or whatever, and could be bid up to reflect their component value. I suspect very few people would buy the car just for the stereo and fewer still would pay a premium for the stereo to have the car. Good luck.
On a side note, thats why car collectors warn people not to cut holes in a good interior to install speakers. Remember what happened to the first generation Mustangs? The original radios had rounded corners and many people in the 70s filed the corners square to fit rectangular aftermarket stereos. By the late 1980s, that meant an automatic $1,000 deduction from the resale value of the mustang because it was so expensive to have a body shop weld in new metal to the dash to put it back the way it was. Today, reproduction center dash sections are available from vendors in Mustang magazines, but it still has to be welded in. Thankfully, door panels to us are not so extreme to repair but should still be a consideration if you want to ever get your money back out of both the stereo and the car. And wasn't suprafiend offering some mint maroon interior parts - mabe even door panels?

$3250 for a MKII with 230000miles. You should have taken it.
Take out the stereo and sell it seperately. If your car bids up near $3000 again jump on the money and run.
