What could it mean when the temp guage spikes, at all?
It did this twice. Once for about 5 seconds. And again for about a second a few days later.

Probably air pockets.

Jack your front end up high, and put water/coolant in the radiator while the engine is running, this is "burping" the coolant system.

The idea is to put the point in which you fill up the radiator higher than that of the heater core so you will get all air out.

If it does it again after burping, I would say check into getting a compression tester and see if you have a blown head gasket.

Do what Tanya says, and if it still happens, check the sending unit and the tsat (not likely) but I have the same problem occasionally and I think after 2-3 years of half-hearted troubleshooting that the dash unit is the culprit. But hey I used to do astronomy and they have large margins of error and unique therories to say the least.

Found some spots where coolant is leaking.Doesn't look like much but I'm sure it's enough to create pockets of air. I haven't burper the car yet but will do that soon.

Thanks.
