So I just replaced the water pump, but now I can't seem to get the alternator belt tight enough? Its definitely slipping on the pulley, causing it to heat up

It IS a goofy adjustment method! I have seen other Japanese cars with those adjustment parts broken off.
A pry bar works fine.
With a NEW belt, too tight is just right. It will "stretch."
A USED belt- just snug.

In the winter, belts may crackle and make horrible mechanical noises! It's just moisture on the belts, clicking into the pully grooves.
Candle wax or even a Crayon fixes that. Spilled anti freeze on a belt-same noise.
Any rubber or plastic part down wind of the radiator lives in a very harsh environment! Heat kills belts, hoses, timing belts and yes, even plastic cooling fans.
The top hose will blow first. To make is last MUCH longer, add a few hose clamps along its straight- part length.

While the radiator is out, take a look at that water pump .Easy to replace when that RAD is out.
Carefully inspect the fat wires that run above and below the RAD for problems.
