The VG30DETT is a very wide engine which is why you rarely see them used in engine transplants - they just don't fit in most engine bays! I haven't measured one to see if it will fit in a Mk2, but I think it would be a pretty tight squeeze. You're better off with an inline six (eg 1JZ/2JZ) since that's what the Mk2 is designed for.

the V8 is a real popular swap into the old 240/260/280 Zs.... but they couldn't get the same power as we can by just bolting on a turbo.

My buddy wants to build a "240 2JZ", he loves those old cars, and well, the 2JZ! I think it would be a pretty cool car.
