I have notice that, in Prague, that when they restore a building, they restore everything, but they don't clean the stone material, that is a black as before the restoration (even though the colour of the original stone would be cream). The best example is the Charles Bridge, all black even after the restoration. I wonder why?

Because it would damage the statue. The black is a coating of probably soot, smog, and acid rain. Though I'm sure they could probably clean them, perhaps they don't want to damage them, or they're too cheap. I'm sure to do it properly would be very expensive.
